Spaghetti and Hotdog Monsters!

This is such a simple and fun meal that the kids will love to help make!

All you need are some hotdogs and spaghetti

 Cut your hot dogs into 2 inch pieces and begin sticking pieces of spaghetti through in random order (This works best when the spaghetti is broken in half)

Keep going until all of your Spaghetti Hotdog monsters and ready to cook


Pop the monsters into boiling water until your spaghetti is cooked through


Now your monsters are ready to eat! 


Serve with some butter and Parmesan cheese and enjoy!

Pizza Party

Last week we went a little Pizza Crazy!

I bought some pre-made dough from our local grocery store along with a hodge-podge of ingredients and we went to town making some of the most delicious pizzas I have ever had!


We opted for some traditional (who doesn't love a plain ol' pepperoni pizza) and we also went for some a little more out of the ordinary 
(yup those are eggs on that pizza up there!)

Let's take a closer look...

Fresh tomato, basil and mozzarella


Pesto, shrimp, mushrooms, red peppers and gouda cheese

Pesto, asparagus, prosciutto, mushrooms and feta

Tomato sauce, pepperoni and fresh mozzarella

Crispy Prosciutto, gouda cheese and sunny side up eggs

Next time you find yourself reaching for that pizza delivery number, 
try this instead! 
Trust me, making pizza at home is a lot more satisfying then waiting for the delivery driver!

Peanut Butter Almond Cookies

Peanut Butter Almond Cookies! 

If your a peanut butter lover (like us) then these just might 
be your new favorite cookie! 

These cookies are so moist and bursting with chunky peanut butter....

(Is your mouth watering yet?)

Here's what you need..


1. Cream together peanut butter, butter and sugars in an electric mixer

2. Add the eggs one at a time
3. In a separate bowl sift together the remaining dry ingredients


4. Slowly add the dry ingredients to the butter and sugar mixture
5. Refrigerate between 30 minutes and an hour
6. Roll dough into 1 inch balls

7. Flatten with a fork and top with almonds 

8. Bake at 375 degrees for 10 minutes

Grab a glass of milk and Enjoy!

Lemon Poppy Muffins

When I heard about the Get Your Chef On Challenge hosted by White Lights on Wednesday and Four Marrs One Venus I was so excited to sign up!

The first challenge was..





I spent a lot of time researching and brainstorming because I wanted this recipe to be perfect
Then it hit me..
Lemon Poppy Muffins


These muffins were a breeze to make, and I'll bet you already 
have most of the ingredients on hand!


1. Preheat oven to 350 degrees and grease muffin tin

2. Cream the butter and sugar together in a large bowl

3. Add egg yolks one at a time and beat after each

4. In a separate bowl, stir together the dry ingredients with poppy seeds and lemon zest

5. Alternate adding the dry ingredients, yogurt, lemon juice and vanilla to the creamed sugar mixture

6. Beat until smooth

7. Whip the egg whites together in a separate bowl until soft peeks form

8. Fold the whipped egg whites into the batter until blended

9. Fill muffin tins up 3/4 of the way and bake for 20-25 minutes or until a toothpick comes out clean




Once you take the muffins out of the oven you can quickly whip up the sugar icing. 

I used about 1/2 cup powdered sugar and the juice of 1 lemon, mixing together until I got the perfect pourable consistency.

I also made raspberry glaze by melting some raspberry jam in the microwave for 20 seconds and mixing with the glaze

You can pour or pipe onto warm muffins and allow to cool 
(if you can wait that long!)

Peanut Butter and S'mores Brownie Bites


Using boxed brownie mix, these adorable and delicious Brownie Bites 
couldn't be simpler to make!


For these S'mores Bites simply make the brownies according to the box instructions, and bake in a brownie bite pan. 

Once they are just shy of being done remove them from the oven and dab some melted chocolate on top as glue to hold the marshmallows in place.  

Place them back into the oven under to broiler for 2 minutes until the 
marshmallows are just browned.  

Finish these off with a drizzle of melted chocolate on top!


For the Peanut Butter Bites, mix a 1/4 cup of peanut butter into the brownie mix and bake in a brownie bite pan.

Microwave 1/2 cup of peanut butter, stirring every 30 seconds until it is thin enough to pour

Once the brownies have cooked, use a spoon to make a dent in the top and fill with some melted peanut butter

Top with chocolate and peanut butter chips

These are such a hit - I've made them twice and we never have any left overs! 

  
To make these bite size I used this Wilton Brownie Bite Pan that I purchased on Amazon for $8.00
Since I was making two boxes of brownies at a time, I was stuck waiting for these to bake and cool, bake and cool, bake and cool 
since I only have one of these pans.  So take my advice and order at least two! C'mon they are only $8!

Roasted Asparagus and Mushrooms

You can't go wrong with roasted vegetables!
It's so simple to do, requires hardly any ingredients and it always tastes delicious!

For this recipe I used two different kinds of mushrooms and one bunch of asparagus 
because that's what I had in my fridge. 


Preheat the oven to 400 degrees. 
Toss your veggies with 2 tablespoons of olive oil, salt and pepper and roast for 30 minutes
(And that's all folks! Does it get any easier?)

Mini Muffin Omelets

These Mini Muffin Omelets are perfect for a brunch or even a quick healthy snack! They are easy to make, and easy to customize with your favorite ingredients.


I made two different kinds -
Broccoli Cheddar Omelet
Western Omelet


Start by pre-cooking your ingredients.
I flash boiled my broccoli and in a separate pan I sauteed ham, peppers and onions.


Scramble the eggs and milk together.  Add your ingredients and pour into greased cupcake tins.
Bake for about 20-25 minutes until the omelets puff up and are cooked through.


Let them cool slightly before moving them to the plate -




These will stay for about a week in the fridge wrapped in plastic wrap
You can also freeze them for later!
