S'mores Bars

As the weather warms up I always find myself craving a good old fashioned campfire and some s'mores.  Well, unfortunately it wont be quite that warm for a while - but these S'mores Bars will definitely do the trick until then!

Preheat the oven to 375 and line a 9 by 13" baking dish with foil - be sure to leave enough foil hanging over the ends because later we will use these as handles to remove our S'mores. 

Begin by crushing your graham crackers nice and finely in a food processor. 

Now in a bowl mix the crushed graham crackers with your sugar, salt and 2 sticks of melted butter.


Once these ingredients are all combined you'll be left with mixture that looks like wet sand (but tastes much better I promise!)

Use your remaining 2 tablespoons of butter to grease the foil in your pan.  





Put aside about a 1 cup of the graham cracker mixture for the topping






Spread the rest of the graham cracker mixture into the bottom of your pan, pressing it down to form a firm crust.  Bake in the oven for about 15 minutes until golden brown. Allow the crust to cool for 20 minutes before adding the chocolate.

As your crust is cooling, melt the chocolate chips in a saucepan over low heat.  Your going to need some patients for this part - if you try to rush it your chocolate will burn! 


Once you have a nice melted consistency, pour the chocolate over the crust and spread it evenly with a spoon.  Top the chocolate with marshmallows - pressing them down slightly into the chocolate.  



Now sprinkle the remaining cup of graham crackers on top and in between the marshmallows. 


Turn your broiler on medium and place the tray about 6 inches away.   
Do not walk away from the oven! 
It will only take about one minute for your marshmallows to become brown and bubbly! 


Refrigerate for about 2 hours until your chocolate hardens.  Use your foil handles to remove them from the pan.
Cut into squares and these beautiful treats are ready to enjoy!
