Mini Muffin Omelets

These Mini Muffin Omelets are perfect for a brunch or even a quick healthy snack! They are easy to make, and easy to customize with your favorite ingredients.


I made two different kinds -
Broccoli Cheddar Omelet
Western Omelet


Start by pre-cooking your ingredients.
I flash boiled my broccoli and in a separate pan I sauteed ham, peppers and onions.


Scramble the eggs and milk together.  Add your ingredients and pour into greased cupcake tins.
Bake for about 20-25 minutes until the omelets puff up and are cooked through.


Let them cool slightly before moving them to the plate -




These will stay for about a week in the fridge wrapped in plastic wrap
You can also freeze them for later!

  7. I have a similar recipe in my 'to try' list, but it doesn't have the added veggies. I like that idea and will be sure to 'dress' them up when I make them soon. YUUUMMMM-OOOO!!

  19. bake at what temp? Im assuming 350 degrees but i didnt see it anywhere in the instructions. Excited to try!
